Fill pressure cooker with water about 1/2 way up. Bring to boil and add the head of chopped garlic.
Add the beef tongue to the water. It should just be covered.
Lock pressure cooker lid on and bring to 2 for 1 hour. Let pressure release naturally.
When it is done, you should be able to easily remove the skin.
Then slice or shred. I like it shredded.
In a cast iron pan add butter, more garlic and the onion, diced. Cook till softened and then add the shredded tongue and mexican spices.
Then heat up tortillas , add your favorite toppings like guacamole, cheese, lettuce and salsa and devour! My kids absolutely love this recipe as well as my grandson! Enjoy!
