Hey there, everyone! You know, eggs are often thought of as a simple, lowly food item; perhaps some consider it a poor-man’s-meat. But we want to share some fascinating information that you may not know, and just see if it doesn’t give you a far greater respect for our humble friend the egg.

In an Authority Nutrition article from June 22, 2017, nutrition expert Kris Gunnars, BSc lays out an unbelievably vast summation of the egg’s virtues. From heart health to macular degeneration prevention, to weight-loss aid (and that’s not even half of it!), the egg is, as Gunnars says, “…among the healthiest foods on the planet”!

He goes on to point out that all of the nutrients necessary for a single fertilized cell to develop into a healthy young chicken are packaged up in every egg; protein (100% complete protein, that is), antioxidants, and almost every vitamin, nutrient, and mineral you can think of (calcium, iron, potassium, zinc, manganese, Vitamin E, Folate, etc.). Nearly every area of your health benefits from the egg because, as we mentioned, the egg is specifically created to nourish a growing body.

So, what could make a better breakfast for your kids? Scrambled eggs, fried eggs, waffles, and omelets all make for a delicious start to the day; but it doesn’t have to stop there. Deviled eggs, potato salad, tuna salad, and quiches are just a few of the many ways to incorporate eggs into your meals, not to mention custards, puddings, and meringue pies, mm-mmm!

And remember, although factory-raised eggs may be better than nothing, pastured hens are able to diversify their diet much more, thus producing higher levels of nutrition. (And we personally enjoy our eggs more knowing that they came from happy hens!)
