'Ranch Style' Baked Pastured Chicken
If you're looking for another way to enjoy healthy, pastured chicken, this is a fun recipe to try. It's a hit with kids as well as adults, if you're serving a mixed crowd of variously-picky eaters. It goes in the oven leaving you time for a quick cleanup, or even starting some of the nourishing broth we love, with the parts of the chicken you're not baking.
- 1- pasture-raised chicken, cut up
- 1 cup (or a bit more) plain, nonfat Greek yogurt
- 1/2 cup mayonnaise
- your favorite ranch dressing mix (if you want to avoid some of the ingredients in commercial mixes, there are several blends you can make and keep on hand at home, like this)
Mix the yogurt, mayo, and ranch mix in a bowl (I use about 2T of a homemade blend, if using a commercial packet, season to taste).
Arrange your cut up chicken in a single layer in a glass 9 x 13 baking dish, or equivalent. Thickly spread the ranch mixture on each piece of chicken (use it all up). If you're not a fan of chicken with the skin on (although perhaps you should be, if it's pastured chicken), you can spread the mixture on skinless pieces.
Bake, uncovered, at 350º for about an hour.
Serve with your favorite steamed veggies, brown rice, a green salad, or make double use of your hot oven and bake a delicious squash.
Leftovers are delicious and keep for a few days in the refrigerator.
